Lying around the adult pool at Eau Palm Beach Resort & Spa near Palm Beach, Florida, was an inordinate amount of guests donning New England Patriots T-shirts and Boston Red Sox hats.

Snowbirds? No—they were part of a large incentive group of Northeastern convenience store owners and their families on a bleisure trip. Their group was holding meetings and dinners in the property’s restaurants and using common spaces for networking parties. At the same time, a large Michigan-based automotive group was taking up several of the breakout rooms on the ground floor.

Eau Palm Beach Resort and Spa Jonathan AdlerAt this 309-room property with cheerful, tongue-in-cheek decor by designer Jonathan Adler, a Freauzen dessert menu and wacky spa concepts (3001: A Face Odyssey, anyone?), meeting profs will find everything is a little left-of-center. From F&B to unusual locations to fully functioning business cabanas, the five idea sparks on the following pages could change how you co-create your next event with a hotel.
